
Items needed:
-7 cups of bread cubes (remove the crust from the bread before the cut)
-6 large eggs at room temperature
-3/4 cup granulated sugar
-1/2 teaspoon of salt
-1 1/2 cup of cream whipping heavy
-1 1/2 cups of half and half
-1 teaspoon of vanilla extract
-1/4 cup dark brown sugar
-3 tablespoons of butter (at room temperature and not salty)
-1 tablespoon fresh lime juice (if using concentrated and then to use only 1/2 tablespoon)
-4 medium ripe bananas
Preparation:
-Roast the cubes of bread in the oven at 350F for about 7 minutes, until they are dry. This will prevent the bread get too soggy.
-Remove the oven and set aside for later use.
-In a bowl, whisk the eggs, sugar, vanilla extract and salt and mix well.
-In a heavy bottomed saucepan, whisk the cream and half and half over medium heat. Remove from the heat.
-Add the cream mix to the egg mixture and beat until the ingredients are mixed well.
-Sift the custard and put it aside to warm cold temperature. Make sure that it has no pieces in the mix.
-In a separate saucepan, take butter and brown sugar and heat over low heat until the butter is melted and the sugar has dissolved.
-Cut the banana in two tranches in cross the length, then thin.
-Put the slices of banana sauce prepared previously and stir for 30 seconds until that banana pieces are coated on both sides.
-Remove from heat and cold.
To assemble the pudding:
-Lightly grease a dish and sprinkle with 1/3 cubes of bread in the bottom of cooking 8 x 8 x 2 inches.
-Pour 1/2 of banana slices and sauce over the bread.
-Cover with 1/3 of warm custard.
-Add another layer of bread cubes, banana and cream on top of the first layer.
-Add the third layer of bread and pastry cream, press lightly on top and cover with aluminum foil.
-Preheat the oven to 350F.
-Place the glass dish in a water bath. To prepare a water bath, fill a large baking dish, metal half of water.
-Bake in the oven at 350F for about 30 minutes.
-Remove the aluminium and bake in the oven for 45 minutes
-Remove from the water bath and set aside for 15 minutes.
-Serve hot.
